Her great granddaughter Winnie is a fan

My Mom's enchiladas live on...

in her great granddaughter Winnie.....because...



 according to her mom Lindsay, she loves them.


Winnie ate them on Great Grandma's 86th birthday this week.
I hope it becomes a tradition.
I know someday Lindsay will tell Winnie all about her Great Grandma Gaynor.


Thinking back, I'm amazed how many people have asked for my Mom's simple enchilada recipe. 

A few years ago her friend Elaine (and Ernie) Weeks emailed me for it.
They were very close friends to my parents in the 1950-1960s.
(Is not that the sweetest picture?)
But Elaine remembered those enchiladas from probably 45 years prior.


And each time Terri, (below) had a baby she requested Mom make enchiladas for her.
Not sure why my Dad is lying down for the picture.



By the way....A good friend commented to me through email that I should try softening up the 
tortillas in the microwave, instead to dipping them in the warm sauce on the stove.
Perhaps that would be easier. I wonder how most people roll enchiladas.

Winnie is short for Wynn Alouette. She is a happy smiley baby.

The couple is Elaine and Ernie Weeks. Shortly after my parents joined the Mormon church in 1955, this couple became their fast friends and taught them many things about our church and the way we live now. They were about same age as my parents, but mentors to them. I love that picture of them and was looking for an excuse to put it on my blog :)

Winnie is SO beautiful! And I love her name! We need to try these enchiladas! McKay said he remembered loving them. I'm going to make them this week.

Hey that's my granddaughter! Love to see her happy little face--and I'm not surprised she loves her great-grandmother's enchiladas. She is the best eater ever! I love your blog, Jill--you do a wonderful job of sharing family stories and personal insights. I hope you get to see Gard, Lindsay and Winnie at Christmastime!

Yes! Tyler was just telling me that the only enchiladas he's ever really liked are the ones you made! He asked me to get the recipe from you recently, but I completely forgot! We'll definitely be making these soon, too!
