My new favorite cookie

I would be surprised if anyone does not like this recipe. 
I gave up cookies a few years ago, but then I found this recipe...from my niece Julie, and I've become a baker again.

Since the recipe has no flour I guess it could be considered gluten free, right? If that matters to anyone. 

I use to bake cookies nearly every day because my boys would come home looking for treats after school.   I wish I had known about PBOCCs back then since these are hearty and filling with all that peanut butter and oatmeal in them. 


Last week when we went to see my Dad and Susan, guess what they served us? PBOCCs! They like them too.
For those of you who think I must be making this all up since I don't like chocolate.... I just take mine out.

Best. Cookies. Ever. Well at least in the top five, for sure.

And I am past the nesting stage, gave up trying to keep busy, now I just pray a lot and try to picture my water breaking- as if I could think it into being.

I'm glad you like them. I keep thinking I should make them again, but then I don't because I know I will eat the whole batch! I love the flavor combinations of the peanut butter, chocolate, and oatmeal...yummy!

Carly~~ I was really hoping you would have the baby this past weekend because we just came by Visalia today on our way home from LA. But we will come back just as soon as you are ready to see us. I'll bring you some food, too :)

Maybe she will be born on your Mom's birthday tomorrow!

Ryan~ I would send you some of these cookies tomorrow if I thought they would stand a chance of arriving without melted choc chips! So I'll send some with Dennis when he comes in a few weeks. :) Hypothetically speaking, I mean.

I will try these cookies. My daughter is getting married in August and wants to serve cookies for refreshments. I've made cookies and have been putting them in the freezer. I'll definitely make these. I think if I make them smaller, they'll be "wedding worthy". Thanks for sharing the recipe.

We love the cookies too (as you know.) My daughter wants them to be less crisp and suggests we bake them for only 11-12 minutes and not the 14 minutes your dad does. He likes them crisp and it seems to be against his "instinct" to bake them less. I'll try to intervene here one of these days. Love, Dad and Susan

Yolanda~ I do remember hearing that oats can be a problem, but Bob's Red Mill makes gluten free oats.

I'm so hungry & those look WONDERFUL! It's hard for me to imagine anyone not likeing chocolate! Here's a recipe for you that's addictive.

Easy Short Bread

1 cube butter
1/4 cup powder sugar
2 Tbsp corn startch
3/4 cup butter

Mis all real good. Make balls & flatten them slightly & for a fancier flair, push a fork on top for the lines. Bake 350 for 15 mins
