Oven Baked Chicken, Potatoes, and Onions

Can I really show you a recipe without showing you the end results?
I think so, you may need it right now.

I got this recipe a few months ago off the Food Nanny program, and I've made it several times since.
It's EASY and the fresh rosemary gives it a  GREAT flavor.

1 onion, sliced in small chunks
4 potatoes, cut up in sort of thin wedges
4 chicken thighs (Food Nanny uses a combo of thighs and legs...she also leaves the skin on, I don't)


Put cut up potatoes and onions on cookie sheet. Drizzle with 1-2 T of olive oil (I use 1T) , and then smoosh all together with your hands.
Set chicken pieces around.
Then drizzle 1-2 more Tablespoon olive oil over the chicken pieces.
Give a good dusting with coarse salt, and fresh ground pepper.
Break off sprigs of fresh rosemary (I also chop the sprigs up smaller) and generously sprinkle all over.

 **So I don't have to buy a new pkg of fresh rosemary each time, 
I just keep the leftover rosemary in the freezer till I make this recipe again.
Don't use the rosemary in your spice cupboard, this "fresh" stuff tastes SO much better!


***I only had one yukon potato to use today. 
Normally I would use my larger cookie sheet and it would be much fuller looking with 4 potatoes cut up


Bake @400' for 30 minutes.
Then check and rearrange the vegs and bake for another 25-30 minutes more.

I didn't think to take a picture of it all cooked until it was half eaten.
So just trust me, it looks like the picture above, only baked   :)
And if you make it, I'm sure you will have more potatoes!



I know it's not the season to warm the house up with an oven meal, but sometimes it just feels good to have a real meal on a hot summer day.
A salad or green vegetable with this is perfect.

These days Amanda has dinner ready for us every night, because Scott is in the middle of remodeling their kitchen...so, since her kitchen is unusable right now, she is at my house every night making dinner.
