Don't forget to roast your vegetables.

Seriously.
Winter time is the best for this. SO easy.

Just cut them up in bite sized pieces, toss with a little olive oil and salt and pepper.  (I like lemon pepper.)
Put in a 400' oven and roast for about 30-45 minutes.
Root vegetables of all kinds are so available now. 
You can just do simply carrots, potatoes and onions if that's what you have. 

I made this tray last week and I think there were carrots, a sweet potato, onions, beets, kholrabi, and yellow pepper.
This week we had a combination of squash, rutabagas, fennel, and onions.
I've never tried a combination of vegetables that doesn't taste good.

We had tilapia and rolls with this, and these were the only vegetables left after dinner for the 2 of us. 
They are that good!


And the hot oven warms up the house.

Rebecca...I use a 'Crinkle Cutter' made by Pampered Chef. I'm surprised you don't have one. It's probably my favorite kitchen utensil next to a knife. I don't use it because it crinkles things, I use it because it is SO EASY to cut things with...goes so quickly. If the link below doesn't work just google it.

Rebecca~~~ Oh and the red vegs are a kind of beet. I like the striped ones much better than the solid red ones, but I can't remember what they are called. I just get them through our weekly vegetable club.

oh ok, I DO have one of those, I just don't use it, I need to pull it out I guess. The vegs look so nice cut this way! I also need to think out the box and use some different vegs! Thanks for the inspiration here, I sometimes feel like we are in a rut here with what we eat and I need to think up some different things, this gives me some ideas!

Darlene~~ I just buy the frozen wild tilapia in the indivdual pkgs at Trader Joes. They are lightly seasoned already, and then I just pan fry them in a little butter and olive oil. We love it!

Rebecca~ I can't believe you have one of those crinkle cutters and you don't use it. Mine saves me so much time and energy. Chop chop chop goes by so much quicker. Mine however has a straight edge, and the ones they sell now I noticed are rounded. I wonder if they work as well as mine does.
Also, we belong to a community vegetable club so we get a wide variety each week to try. I think you have something like that in your area, right?
