While eating with the Sister Missionaries tonight they were raving about a recipe they recently learned to make. I couldn't absorb all the details so I just asked them to record it on video. (also so her mother could see how well she is doing 5 weeks out on her mission!)
I'm going to try this soon on my family. I like how the main part is cooked in the crockpot. Looks like it would be great for a large group.

Jill, this is unbelievable! I had my Aunt for her recipe for pulled pork just the other day, it's a good one, but I've really been wanting one for the crock pot! And here you have it!

That's what I liked about it too. The meat can be made ahead in the crockpot, the dressing looks pretty simple, and so does the rice....then you just put out all the toppings. I like recipes where everyone gets to make it the way they like it.
What cute sister missionaries! They look like they get along too :-) The men in my family love the Cafe Rio burritos. I've tried a bite once in a while and they are tasty! I'll have to see if Craig wants to try this recipe. Thanks for sharing.

Those sister missionaries are too cute. I miss ours. We had some for along time and just recently they took them out. I hope they send them back soon.
Ashley makes a GREAT version of this... Same pork with no chili powder. She uses homemade ranch dressing with added cilantro or parsley. Uncle Bens wild rice(add 2 tbs. lemon juice after it is cooked).
She heats tortillas and either serves this flat like a salad or rolled up like a burrito. She chops up leafy green lettuce, tomatos, black beans, salsa, sour crea
m. A definite favorite around here and we call if Cafe Rio.

Jill, You'll be happy to know your dad and I just had this very meal the other day! In fact we ate at Cafe Rio twice in St. George, once in American Fork (with Richard, Wendy, Jon, and Shellie), and then again in Sandy! I'm thrilled to have these recipes. Or, now that I know Ashley is an expert, maybe we can cajole her to replicate our fond memories of our favorite restaurant in Utah!!! Love, Dad and Susan
